I was wondering what happens to the current head coaches? For example, if I choose to coach the Dallas Cowboys, what happens to Bill Parcells? Can he become one of my assistants or an assistant to on another team? Or does he and all head coaches just disappear?

Yep. They go out into the coaching poll where they can be picked up by another team.
