Cyberpunk 2077: Dialogue choices

Can they alter the story later in the game? Does it matter what you choose??

Yes.

Your dialogue choices do change the ending, however I think they still allow you to choose your ending up to the last minute. So for example if you chose option A two hours into the game, it won't exclude you from option B 50 hours in.

In other words, I wouldn't worry too much about your choices throughout the game if you're concerned about the ending; role play as the character you want to role play as.
